Instructions
Place all of the ingredients for the meatballs into a large mixing bowl, and knead with your hands until well combined. The mixture will be very wet, but do not worry. Form the mixture into 20 small meatballs.
Add the sesame oil and mushrooms to a saucepan over medium heat on the stove. Saute for 1-2 minutes.
Pour the chicken broth into the saucepan and add the soy sauce and chili garlic sauce as well.
Bring the mixture to a low boil and add the meatballs in, you can add a little water if needed to make sure the meatballs are fully covered.
Continue to cook until the meatballs begin to float and are cooked through.
Add the bok choy to the saucepan and submerge it. Simmer the soup until the bok choy is tender. Serve the soup.
