Ingredients

Crust

  • 1 1/4 cup Almond Flour
  • 1/3 cup Coconut Flour
  • 1/3 cup Powdered Sugar Substitute
  • 6 tbsp Butter melted

Peanut Butter Cheesecake

  • 8 ounces Cream Cheese softened
  • 1/2 cup Creamy Peanut Butter
  • 1/2 tsp Vanilla Extract
  • 1/3 cup Powdered Sugar Substitute

Chocolate Layer

  • 2/3 cup Sugar-Free Chocolate Chips
  • 1/4 cup Heavy Whipping Cream
  • 8 ounces Cream Cheese softened
  • 1 tsp Vanilla Extract
  • 1/3 cup Powdered Sugar Substitute

Optional Topping

  • 2 tbsp Chopped peanuts

Instructions

  • In a bowl, combine the crust ingredients. Stir well until you have a crumbly texture.
  • Press the mixture into a parchment paper lined pan. Press firmly to create a flat crust.
  • Place the pan in your freezer for now.
  • In a separate bowl, mix together the peanut butter cheesecake layer ingredients until smooth.
  • Spread the mixture on top of the crust, then return to the freezer.
  • To create the chocolate layer, mix together the cream cheese, powdered sugar and vanilla, set aside for now.
  • In a microwave safe bowl, heat the chocolate chips and whipping cream. Heat at 30-second intervals until the chocolate chips have melted.
  • Add the melted chocolate to the cream cheese mixture, and mix until you have a smooth texture.
  • Spread the chocolate layer on top of the cheesecake layer. Garnish with chopped peanuts, if desired, then return to the freezer for 1-2 hours.
  • Remove and slice. ENJOY!
