In a bowl, combine the crust ingredients. Stir well until you have a crumbly texture.
Press the mixture into a parchment paper lined pan. Press firmly to create a flat crust.
Place the pan in your freezer for now.
In a separate bowl, mix together the peanut butter cheesecake layer ingredients until smooth.
Spread the mixture on top of the crust, then return to the freezer.
To create the chocolate layer, mix together the cream cheese, powdered sugar and vanilla, set aside for now.
In a microwave safe bowl, heat the chocolate chips and whipping cream. Heat at 30-second intervals until the chocolate chips have melted.
Add the melted chocolate to the cream cheese mixture, and mix until you have a smooth texture.
Spread the chocolate layer on top of the cheesecake layer. Garnish with chopped peanuts, if desired, then return to the freezer for 1-2 hours.
Remove and slice. ENJOY!
