1medium Beet peeled and sliced
3cupsWater
2/3cupApple Cider Vinegar
1tspSalt
Filling
2tbspMayonnaise
1tbspSour Cream
1tspDijon Mustard
1tspFresh Chiveschopped
2tspFresh Dill chopped
Instructions
Add the water, beet slices, apple cider vinegar and salt to a pot over medium heat.
Bring the mixture to a lightly boil, and then reduce the heat to simmer covered for 20 minutes.
Strain the beet mixture into a mixing bowl, and allow to cool.
Peel the hard boiled eggs, and place them into the beet mixture so that they are completely covered.
Chill the eggs in the beet mixture for at least 2 hours.
Remove the eggs, and slice them in half.
Add the yolks to a mixing bowl with the filling ingredients. Stir to combine well until smooth.
Pipe the filling mixture into the eggs and serve.
