Ingredients

Hard Boiled Eggs

  • 5 Hard Boiled Eggs
  • 1 medium Beet peeled and sliced
  • 3 cups Water
  • 2/3 cup Apple Cider Vinegar
  • 1 tsp Salt

Filling

  • 2 tbsp Mayonnaise
  • 1 tbsp Sour Cream
  • 1 tsp Dijon Mustard
  • 1 tsp Fresh Chives chopped
  • 2 tsp Fresh Dill chopped

Instructions

  • Add the water, beet slices, apple cider vinegar and salt to a pot over medium heat.
  • Bring the mixture to a lightly boil, and then reduce the heat to simmer covered for 20 minutes.
  • Strain the beet mixture into a mixing bowl, and allow to cool.
  • Peel the hard boiled eggs, and place them into the beet mixture so that they are completely covered.
  • Chill the eggs in the beet mixture for at least 2 hours.
  • Remove the eggs, and slice them in half.
  • Add the yolks to a mixing bowl with the filling ingredients. Stir to combine well until smooth.
  • Pipe the filling mixture into the eggs and serve.
