What Are Pickled Deviled Eggs
As the name implies, these are deviled eggs that are made with pickled eggs, flavored with beets. The beets are what give the eggs the distinct pink color and they add an eye-popping tangy flavor with hints of sweetness.
My recipe speeds up the pickling process by hard-hoiling the eggs with beets, apple cider vinegar, and salt. This infuses the flavors into the eggs without having to wait for them to soak in the mixture over months.
You just have to let the egg simmer for about 20 minutes in the beets and vinegar mixture.
Pickled Deviled Eggs
The pickled eggs aren’t the only things bursting with flavor. The filling is zesty and tasty, too!
I usually make deviled eggs with mayo and mustard with some chopped pickles. But in this recipe, I added some sour cream, Dijon mustard, and some fresh herbs.
The fresh chives and dill enhance the mayo and sour cream in the egg yolk filling. It’s totally optional, but if you want to add something extra to the deviled eggs, place the filling in a piping bag and pipe the mixture in the egg whites.
It will show off the deviled eggs in a fun new way.
Keto Deviled Eggs
There are only 2 grams net carbs in each deviled egg. That leaves enough carbs for you to enjoy more than one or to add your favorite sides with it.

One of the easiest changes is to swap the Dijon mustard with spicy brown mustard. This one change will add some fantastic heat to the deviled eggs.
What To Eat With Deviled Eggs

How To Store Deviled Eggs
You can save yourself a lot of time by hard boiling all of your eggs ahead of time. Store hardboiled eggs in an airtight food storage container in the refrigerator for up to a week.
Pickled deviled eggs don’t last very long in the refrigerator. I suggest you eat them up and only keep them for a max of one day.
When you store leftover eggs, keep them in a sealed container in the refrigerator.

Ingredients
Eggs:
- 5 Hard Boiled Eggs
- Beet
- Water
- Apple Cider Vinegar
- Salt
Filling:
- Mayonnaise
- Sour Cream
- Dijon Mustard
- Fresh Chives
- Fresh Dill
- Salt and Pepper
Directions
Add the water, beet slices, apple cider vinegar and salt to a pot over medium heat.
Bring the mixture to a lightly boil, and then reduce the heat to simmer covered for 20 minutes.
Strain the beet mixture into a mixing bowl, and allow to cool.
Peel the hard boiled eggs, and place them into the beet mixture so that they are completely covered. Chill the eggs in the beet mixture for at least 2 hours.
Remove the eggs, and slice them in half.
Add the yolks to a mixing bowl with the filling ingredients. Stir to combine well until smooth.
Pipe the filling mixture into the eggs and serve.
