Ingredients

  • 18 slices Keto Bread cut into cubes
  • 1 2/3 cups Almond Milk
  • 1/2 cup Heavy Whipping Cream
  • 1 tsp Vanilla
  • 5 large Eggs
  • 1 cup Pure Pumpkin Puree
  • 1 cup Swerve Confectioner's Sugar Substitute
  • 3 tsp Pumpkin Pie Spice

Topping

  • 3 tbsp Melted Butter
  • 1/3 cup Chopped Pecans
  • 1/4 cup Almond Flour
  • 1 tsp Vanilla Extract
  • 1/4 cup Swerve Brown Sugar Substitute

Instructions

  • Layer the bread cubes in a well greased 9x13 baking dish.
  • Blend together the almond milk, eggs, heavy whipping cream, vanilla, pumpkin puree, Swerve and pumpkin pie spice until well combined.
  • Pour the mixture over the bread in the baking dish, and allow it to sit in the fridge for at least 4 hours.
  • Mix together the topping ingredients, and crumble over the top of the french toast bake.
  • Bake in a preheated 350 degree oven for 40-45 minutes.
