The first time I made keto French toast, it was life-changing! Ok, that might be a bit dramatic, but the feeling is genuine.
When I started keto, I thought bread and sweets were off-limits. But then I learned that it’s more important to track your macros, stay active, and eat a well-rounded diet than to eliminate all bread.
This recipe builds on my first French toast recipe. This time, I made a French toast casserole with pumpkin.
The result is a recipe that will feed your family and tastes perfect in the fall and winter. I could eat pumpkin all year long, but this is the perfect way to celebrate pumpkin season!
Pumpkin French Toast Bake
This easy pumpkin French toast bake was inspired by my low-carb pumpkin French Toast Roll-Ups. But instead of making individual roll-ups, I baked everything in a tray.
It’s a huge time-saver and feeds a lot more people in less time.
I used real pumpkin puree in the French toast bake. If you have some pumpkins that you want to get rid of, then slice and roast them.
You can make your own pumpkin puree! Or, buy the canned pumpkin puree from the store.
Just make sure you don’t accidentally buy pumpkin pie filling (it has way too much sugar in it).
Keto Pumpkin French Toast
My favorite thing about this pumpkin French Toast is the crunchy topping. I combined melted butter, chopped pecans, almond flour, vanilla extract, and Swerve brown sugar substitute.
All together, it creates a sweet and salty topping that reminds me of an oatmeal crumb topping.
Can you make a French toast bake ahead of time? Yes, you can.
Bake it according to the directions. Then, let it cool completely.
Seal it with a lid or some airtight plastic wrap or foil. Then, reheat it in the oven or air fryer.
Don’t try to microwave it or else the bread will become too soft.
Keto Brunch Recipe
What is type of bread is the best kind to use in a French toast bake? It’s best to use a thicker-cut bread so that you have more area for the pumpkin and spices to soak into it but any type of keto-friendly bread will work just fine in this recipe.
If you want to make it dairy-free, then I suggest replacing the heavy whipping cream with some full-fat coconut cream. Get the kind that comes out of the can.
It will give the French toast bake a thicker and richer flavor.
Keto Breakfast Recipe
This pumpkin French toast bake is a very filling recipe. There are 5 grams net carbs in each serving.
If you don’t want to add anything to the side, you don’t have to! But if you want to add something light, I suggest making some Keto Ricotta Pancakes.
I also like to make a keto baked avocado egg with the pumpkin French toast. It’s high-fat and extra filling. Then, sip on a keto brown sugar shaken espresso and you have the perfect meal.

Ingredients:
- Keto bread cut into cubes
- Almond milk
- Heavy whipping cream
- Vanilla
- Large eggs
- Pure pumpkin puree
- Swerve confectioners sugar substitute
- Pumpkin pie spice
For the topping:
- Melted butter
- Chopped pecans
- Almond flour
- Vanilla extract
- Swerve brown sugar substitute
Instructions:
Layer the bread cubes in a well greased 9×13 baking dish.
Blend together the almond milk, eggs, heavy whipping cream, vanilla, pumpkin puree, Swerve and pumpkin pie spice until well combined.
Pour the mixture over the bread in the baking dish, and allow it to sit in the fridge for at least 4 hours.
Mix together the topping ingredients, and crumble over the top of the french toast bake.
Bake in a preheated 350 degree oven for 40-45 minutes.

- 1 2/3 cups Almond Milk
- 1/2 cup Heavy Whipping Cream
- 1 tsp Vanilla
- 5 large Eggs
- 1 cup Pure Pumpkin Puree
- 1 cup Swerve Confectioner's Sugar Substitute
- 3 tsp Pumpkin Pie Spice
Topping
- 3 tbsp Melted Butter
- 1/3 cup Chopped Pecans
- 1/4 cup Almond Flour
- 1 tsp Vanilla Extract
- 1/4 cup Swerve Brown Sugar Substitute
Instructions
