Ingredients

Pumpkin Pudding

  • 4 Sugar free Jello Churro Delicioso pudding cups (You can use sugar free vanilla and add a

    tsp of ground cinnamon if you cannot find the churro flavor)

  • 1 cup Heavy Whipping Cream
  • 1/2 cup Swerve Confectioner's Sugar Substitute
  • 1 cup Pumpkin Puree

Keto Rumchata

  • 1/2 cup Almond Milk
  • 2 tbsp Heavy Whipping Cream
  • 1 tbsp Swerve Confectioner's Sugar Substitute
  • 2 tbsp Rum
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Vanilla
  • Sugar-Free Whipped Cream for topping

Instructions

  • Add the heavy whipping cream and Swerve to a mixing bowl, and blend until stiff peaks form.
  • Stir in the pudding and pumpkin puree.
  • In a bowl, whisk together the almond milk, 2 Tbsp heavy whipping cream, rum, ground cinnamon, vanilla and 1 Tbsp. Swerve until well combined.
  • Pour the rumchata mixture into the mixing bowl with the pudding, and blend to combine well.
  • Spoon the mixture into serving glasses and top with sugar free whipped cream before serving.
