What Is Rumchata
Have you ever had a shot of Rumchata? It’s a cream liqueur made here in America (in Wisconsin, to be exact!). It’s really rich and sweet and is made with rum, dairy cream, cinnamon, vanilla, sugar, and a few other flavorings.
People usually use it as a mixer for drinks, but you can also just take shots of it. I love the flavor of Rumchata, but not the sugar and carbs.
So, I literally created my own! I use a combination of almond milk, heavy whipping cream, Swerve confectioner’s sugar, some flavors, and (of course) rum.
Together, it’s a sippable mixer that tastes incredible in this easy spiked dessert.
Keto Rumchata Pudding
Just like other recipes on Stylish Cravings, this is a super-simple recipe that you can throw together minutes before the party! The secret to this incredible dessert is that I used premade sugar-free Jello Churro Delicioso pudding cups.
If you can find this exact flavor at your store, grab them! They elevate the entire recipe.
You just can beat that combination of sugar and spice. But if your store doesn’t have them, don’t worry.
Grab some sugar-free vanilla pudding and add ground cinnamon to it. While it’s not the exact same, it’s so close that you won’t be able to tell a major difference.
Pumpkin Rumchata Pudding
Yes, I used real pumpkin puree in this pudding. It makes it velvety-smooth, with a natural sweetness that balances out the spice from the cinnamon.
You can either choose to roast a real pumpkin and make homemade puree or grab a can from the store. Both choices have the same amount of carbs and fiber.
Just make sure that you’re grabbing pumpkin puree and not pumpkin pie filling. Pumpkin pie filling has added sugar and spices and will definitely kick you out of ketosis.
If you really want the pudding to be extra fluffy and creamy, use Swerve confectioner’s sugar substitute. It dissolves perfectly in with the pudding.
What To Eat With Pudding
Since this pudding is made with pumpkin and cinnamon, it fits in with all of your favorite fall and winter desserts. Serve the pudding at your next party with some keto apple fritter cookies.
If you love the cinnamon in this pudding, then make a keto cinnamon brown sugar zucchini cake for the party too. Some other desserts that will taste perfect with the pumpkin rumchata pudding include keto pumpkin cinnamon muffins and keto chocolate pecan pie.
But if you want a dessert that doesn’t have pumpkin or cinnamon, then make a sweet and tart low-carb cranberry crisp.
How To Store Pudding
If you have any leftover rumchata pudding, I suggest putting it into an airtight container and storing it in the refrigerator. It will taste the best when it’s fresh, so eat it as soon as possible.
Rumchata pumpkin pudding will stay fresh for about two or three days.

Directions
Add the heavy whipping cream and Swerve to a mixing bowl, and blend until stiff peaks form.
Stir in the pudding and pumpkin puree.
In a bowl, whisk together the almond milk, 2 Tbsp heavy whipping cream, rum, ground cinnamon, vanilla and 1 Tbsp. Swerve until well combined.
Pour the rumchata mixture into the mixing bowl with the pudding, and blend to combine well.
Spoon the mixture into serving glasses and top with sugar free whipped cream before serving.
