1tbspOlive Oil
1/2mediumOnionChopped
1Jalapeno Pepper deseeded and finely chopped
8ouncesWhite American Cheese
4ounces Monterey Jack Cheese
1/4cupHeavy Whipping Cream
1Roma Tomato chopped
2tbspCilantro fresh chopped
Instructions
Place the oil in a saucepan over medium heat.
Add the onions and pepper to the saucepan, and saute until becoming tender.
Reduce the heat to medium low, and stir in the heavy whipping cream and cheeses. Stir and simmer until the cheese has melted completely.
Mix the tomatoes and ½ the cilantro into the saucepan, along with salt and pepper to taste.
Stir to combine, and serve immediately with the remaining cilantro as garnish.
