Ingredients
1Yellow Bell Pepper
1Red Bell Pepper
1Orange Bell Pepper
2cupsShredded Chicken
1cupChopped Broccoli Florets
1/2cupRanch Dressing
4slices Baconcooked and crumbled
1tbspOlive Oil
1cupShredded Monterey Jack Cheese
1/4cupGreen Onions
Instructions
Preheat the oven to 400 degrees.
Cut the tops off of the peppers, and remove the seeds.
Rub the peppers with olive oil, and place into a baking dish. Bake for 15 minutes.
Combine the shredded chicken, ranch dressing, broccoli, bacon and ⅔ of the cheese into a mixing bowl with salt and pepper to taste.
Remove the peppers from the oven, and stuff with the filling.
Top with the remaining cheese, and bake for another 15 minutes.
Sprinkle with green onions before serving.
