Keto Ranch Chicken and Broccoli Stuffed Peppers

Instead of the usual Tex Mex stuffed peppers, these keto chicken stuffed peppers have a cheesy ranch flavor that kids love!

Ingredients

  • 1 Yellow Bell Pepper
  • 1 Red Bell Pepper
  • 1 Orange Bell Pepper
  • 2 cups Shredded Chicken
  • 1 cup Chopped Broccoli Florets
  • 1/2 cup Ranch Dressing
  • 4 slices Bacon cooked and crumbled
  • 1 tbsp Olive Oil
  • 1 cup Shredded Monterey Jack Cheese
  • 1/4 cup Green Onions

Instructions

  • Preheat the oven to 400 degrees.
  • Cut the tops off of the peppers, and remove the seeds.
  • Rub the peppers with olive oil, and place into a baking dish. Bake for 15 minutes.
  • Combine the shredded chicken, ranch dressing, broccoli, bacon and ⅔ of the cheese into a mixing bowl with salt and pepper to taste.
  • Remove the peppers from the oven, and stuff with the filling.
  • Top with the remaining cheese, and bake for another 15 minutes.
  • Sprinkle with green onions before serving.
