Chicken Stuffed Peppers
These colorful stuffed peppers are filled with tender shredded chicken, lots of cheese, ranch seasoning, and earthy broccoli florets. And it wouldn’t be cheesy chicken and ranch without some bacon!

These healthy and delicious peppers are ready in just 30 minutes! I like to make them with rotisserie chicken from the store.
If you have leftover roasted chicken from another meal, use that! This is a great recipe that you can totally reuse ingredients in new ways.
Keto Stuffed Peppers
Stuffed peppers are so simple that you can recreate all of your favorite meals and just use the peppers as a vessel. For example, my kids love Keto Sloppy Joe Stuffed Peppers. Just use peppers instead of buns!

So, when I wanted to make cheesy chicken and broccoli ranch in a different way, I knew that adding it to stuffed peppers was the best way to go.
You can make them with any leftover chicken you have – breasts, thighs, anything! And if you don’t want to use broccoli, use cauliflower florets instead.
Just make sure they are chopped up tiny so that they are easier to eat.
Keto Ranch Chicken and Broccoli
Ranch is one of those flavors that just makes dinner taste better. Ranch pork chops are amazing and ranch definitely makes roasted cauliflower taste better.

Is ranch keto? Yes, it is! It’s still a good idea to always read the ingredients before you buy a packet of ranch seasoning.
You never know if the brand you’re buying might have added sugar or corn or something to it.
How To Store Stuffed Peppers
Stuffed papers are a yummy addition to your weekly meal prep. But I recommend eating them as soon as possible.

If they stay in the refrigerator, the peppers might soften up a bit. Store the stuffed peppers in an airtight container in the refrigerator for up to three days.
If you reheat them in the microwave, the peppers might soften a bit. I prefer to reheat them in the oven or air fryer.
What To Eat With Stuffed Peppers
These stuffed peppers are a complete meal by themselves. If you want to add something on the side, serve them with some garlic cauliflower mash or some bacon-wrapped asparagus.

Both types of vegetable sides have similar tastes as the stuffed peppers. The cheesy chicken and broccoli will also taste wonderful with some keto garlic knots, too!
They are one of my favorite things to eat with chicken.
Keto Ranch Chicken and Broccoli Stuffed Peppers Recipe
Here’s the list of ingredients (and some step by step pictures) that you’ll need to make these incredible keto ranch chicken stuffed peppers. Exact measurements and instructions are located in the printable recipe card just a little bit further below.

Ingredients:
Yellow bell pepper
Red bell pepper
Orange bell pepper
Shredded chicken
Broccoli florets
Ranch dressing
Bacon
Olive oil
Shredded monterey jack cheese
Salt and pepper
Green onions
Instructions:
1. Preheat the oven to 400 degrees.

2. Cut the tops off of the peppers, and remove the seeds.

3. Rub the peppers with olive oil, and place into a baking dish. Bake for 15 minutes.

4. Combine the shredded chicken, ranch dressing, broccoli, bacon and ⅔ of the cheese into a mixing bowl with salt and pepper to taste.

5. Remove the peppers from the oven, and stuff with the filling.

6. Top with the remaining cheese, and bake for another 15 minutes.

7. Sprinkle with green onions before serving.

- 1 Yellow Bell Pepper
- 1 Red Bell Pepper
- 1 Orange Bell Pepper
- 2 cups Shredded Chicken
