Keto Ranch Cream Cheese Chicken and Veggie Rollups

Made with an incredible cream cheese spread, these veggie roll ups are a delicious way to sneak in more vegetables!

Ingredients

  • 2 cups Shredded Cheddar Cheese
  • 2 cups Shredded Chicken
  • 1 tbsp Olive Oil
  • 1/4 cup Finely Chopped Broccoli
  • 1/4 cup Chopped Red Bell Pepper
  • 1/4 cup Matchstick Carrots
  • 4 ounces Cream Cheese softened
  • 1 tbsp Ranch Seasoning
  • Parsley for garnish

Instructions

  • Add the olive oil to a skillet over medium heat.
  • Place the carrots, peppers and broccoli into the skillet, and saute until the vegetables are a crisp tender.
  • Add the chicken to the skillet, and saute until heated through.
  • Place the chicken mixture into a bowl, and stir in the cream cheese and ranch seasoning until blended well.
  • Preheat the oven to 400 degrees.
  • Arrange the cheese into 8 circles on a parchment or silicone mat lined baking sheet. Leave some space between each circle for expansion when baking.
  • Bake for 6-8 minutes, or until the edges start to brown and turn crispy.
  • Let the cheese cool for 2-3 minutes.
  • Place a layer of the filling down the center of each cheese circle.
  • Carefully, while the cheese is still hot, roll the circles up and over the filling.
  • Let the cheese cool and crisp up.
  • Serve garnished with chopped parsley.
