Made with an incredible cream cheese spread, these veggie roll ups are a delicious way to sneak in more vegetables!
Add the olive oil to a skillet over medium heat.
Place the carrots, peppers and broccoli into the skillet, and saute until the vegetables are a crisp tender.
Add the chicken to the skillet, and saute until heated through.
Place the chicken mixture into a bowl, and stir in the cream cheese and ranch seasoning until blended well.
Preheat the oven to 400 degrees.
Arrange the cheese into 8 circles on a parchment or silicone mat lined baking sheet. Leave some space between each circle for expansion when baking.
Bake for 6-8 minutes, or until the edges start to brown and turn crispy.
Let the cheese cool for 2-3 minutes.
Place a layer of the filling down the center of each cheese circle.
Carefully, while the cheese is still hot, roll the circles up and over the filling.
Let the cheese cool and crisp up.
Serve garnished with chopped parsley.
