Keto Sausage Egg and Cheese Bites

Ingredients

  • 6 Eggs
  • 1 pound Breakfast Sausage
  • 1/2 Red Bell Pepper chopped
  • 3/4 cup Sharp Cheddar Cheese shredded
  • 1/4 cup Pepper Jack Cheese shredded
  • Salt and Pepper

Instructions

  • In a large bowl, whisk eggs. Add chopped bell pepper, cheeses and a dash of salt and pepper. Set aside.
  • In a skillet, begin to brown the sausage. Once the sausage is crumbled and fully cooked, remove from heat.
  • Spoon equal amount of the cooked sausage into each muffin tin. Top with the egg mixture.
  • Bake at 350 degrees F for approximately 20-25 minutes.
  • Remove and let cool. Garnish with fresh parsley. ENJOY!
