Keto Sausage Lasagna Roll Ups

Zesty Italian sausage, rich ricotta cheese, all rolled up in a cheese wrap. These keto sausage lasagna roll ups are an easy lunch.

Ingredients

  • 1 pound Natural ground Italian sausage
  • 2 cups Shredded mozzarella cheese
  • 1/3 cup Ricotta Cheese
  • 1/4 Onion chopped
  • 2 ounces Cream Cheese softened
  • 3 tbsp Parmesan Cheese grated

Instructions

  • Heat the oven to 400 degrees.
  • Add the ground sausage and onions to a skillet over medium high heat. Saute until the meat is browned and onions have softened. Drain the excess grease.
  • Remove from the heat, and stir in the cream cheese until melted.
  • Mix in the ricotta and parmesan cheese, and set aside to cool.
  • Form the mozzarella cheese into 8 evenly sized circles on a parchment lined baking sheet.
  • Bake for 6-8 minutes, or until the edges are beginning to brown and turn crispy.
  • Remove the cheese from the oven, and let cool for a minute.
  • Place a layer of the filling down the center of each cheese circle.
  • Carefully fold the cheese circles up and over the filling.
  • Allow the rollups to cool and crisp up before serving.
