Ingredients

  • 12 slices Keto Sandwich bread broken into pieces
  • 1 pound Natural Ground Italian Sausage
  • 1/2 Onion chopped
  • 2 tsp Minced Garlic
  • 2 tsp Fresh Chopped Rosemary
  • 1 tsp Oregano
  • 1 tsp Thyme
  • 1/2 cup White Cooking Wine
  • 1 1/2 cups Chicken Broth
  • 1/2 cup Pumpkin Puree
  • 1/4 cup Heavy Whipping Cream
  • 1/3 cup Parmesan Cheese grated

Instructions

  • Heat the oven to 350 degrees.
  • Add the Italian sausage and onions to a skillet over medium high heat, and saute until the meat is browned and onions have softened. Drain the excess grease.
  • Stir in the garlic, rosemary, thyme and oregano. Saute for 30 seconds.
  • Pour in the white cooking wine, and simmer until most of the liquid is absorbed. Season with salt and pepper to taste.
  • Pour the meat mixture over the bread pieces in a large mixing bowl.
  • Whisk together the broth and pumpkin puree in a separate bowl, and then pour over the meat and bread mixture.
  • Stir in the heavy whipping cream and parmesan cheese.
  • Spread the mixture into a well greased 9x13 baking dish.
  • Cover with foil and bake for 40 minutes.
  • Uncover, and bake for another 5-10 minutes before serving.
