What Is Bread Pudding
It’s not like a chocolate pudding. Bread pudding is a dessert made with stale bread that is soaked in a custard-like mixture and then baking it.
The sauce then caramelizes and the bread remains soft.
I took the classic bread pudding recipe and made a savory version. Instead of sugar and cinnamon, I made a bread pudding out of sausage, white wine, and chicken broth.
The result is like a casserole or hot dish that reminds me of a stuffing that I might make for Thanksgiving.
Savory Bread Pudding
If you love stuffing for Thanksgiving, then you’ll love this recipe, too but since I added ground Italian sausage, it’s more of a main dish than a side. There are 6 grams net carbs in each serving, so it’s really filling by itself.
And I flavored it with fresh rosemary, some oregano, and thyme. It tastes like a bouquet of flavor!
If you want it to be spicier, then use spicy sauce and add some red pepper flakes.
Pumpkin Bread Pudding
What type of bread is best for keto bread pudding? Look for thicker slices, since they will be easier to break into pieces.
If you want to let the bread get stale first, it can help the bread soak up all the chicken broth and heavy whipping cream.
Remember to use pumpkin puree, not pumpkin pie filling. If you use pumpkin pie filling, it might contain added sugar.
You only need 1/2 a cup, so save the rest of the can to use in some of my other recipes.
What To Eat With Bread Pudding
Bread pudding is usually a dessert, but this is more savory, so I suggest eating it for breakfast, brunch, or as a lunch. It will taste delicious with some keto cottage cheese toast.
For a drink, make a homemade keto brown sugar shaken espresso. It’s so filling that it’s the perfect breakfast by itself.
If you’re going to eat it for a snack, then some keto charcuterie jars are perfect with it.
How To Store Bread Pudding
It’s best to store your bread pudding in an airtight container. Keep it in the refrigerator and eat it within three days.
You can freeze bread pudding, too. Keep it in the freezer for up to six months.
Then, let it thaw in the refrigerator overnight before heating it up.

Ingredients
- Keto Sandwich Bread
- Ground Italian Sausage
- Onion
- Minced Garlic
- Chopped Rosemary
- Oregano
- Thyme
- White Cooking Wine
- Chicken Broth
- Pumpkin Puree
- Heavy Whipping Cream
- Parmesan Cheese
Directions
Heat the oven to 350 degrees. Add the Italian sausage and onions to a skillet over medium high heat, and saute until the meat is browned and onions have softened. Drain the excess grease.
Stir in the garlic, rosemary, thyme and oregano. Saute for 30 seconds. Pour in the white cooking wine, and simmer until most of the liquid is absorbed. Season with salt and pepper to taste.
Pour the meat mixture over the bread pieces in a large mixing bowl.
Whisk together the broth and pumpkin puree in a separate bowl, and then pour over the meat and bread mixture.
Stir in the heavy whipping cream and parmesan cheese.
Spread the mixture into a well greased 9×13 baking dish. Cover with foil and bake for 40 minutes.
Uncover, and bake for another 5-10 minutes before serving.

- 1 pound Natural Ground Italian Sausage
- 1/2 Onion chopped
- 2 tsp Minced Garlic
