Keto Savory Reuben Bread Pudding

Sliced corned beef, sauerkraut, and swiss cheese all combined with bread and a creamy sauce create a savory Reuben pudding everyone loves.

Ingredients

  • 8 slices Keto Bread cut into cubes
  • 1/2 pound Corned Beef chopped
  • 1 cup Sauerkraut
  • 2 tbsp Butter
  • 1 1/2 cups Swiss Cheese shredded
  • 1 cup Heavy Whipping Cream
  • 3 large Eggs
  • 1/3 cup Thousand Island Dressing
  • 1 tsp Dijon Mustard

Instructions

  • Preheat the oven to 350 degrees.
  • Pour the melted butter over the bread cubes in a mixing bowl, and toss to combine.
  • Add the cheese, sauerkraut and corned beef to the mixing bowl with the bread, and stir to combine.
  • Layer the bread mixture into a well greased 9x13 baking dish.
  • In another mixing bowl, whisk together the eggs, heavy whipping cream, dijon, thousand island dressing and salt and pepper to taste.
  • Pour the mixture over the ingredients in the baking dish, and toss lightly to combine.
  • Bake for 20-25 minutes until the bread is browned.
