Savory Bread Pudding
Have you heard of bread pudding? It’s usually a dessert made with stale bread that is soaked in a custard-like mixture and then baked.

It has hints of sweetness, but is cooked with sausage, white wine, and chicken broth.

Before we get to the recipe, let’s revisit what a Reuben sandwich is. A traditional Reuben sandwich is a grilled sandwich that is filled with corned beef, swiss cheese, sauerkraut, and Russian dressing.

Stories say that a chef from Omaha, Nebraska, created the first one, and it stuck!
I took the idea of baking stale bread in a sauce and made a savory version! This one tastes just like a classic Reuben sandwich.
I took the ingredients in a Reuben sandwich and used them in a savory bread pudding. Chopped corned beef, sauerkraut, and Swiss cheese are smothered in a creamy sauce (that tastes like Russian dressing).
It’s mixed with some keto bread cubes and then baked. You can enjoy it as a lunch or a side dish with dinner.
Keto Savory Pudding
This keto savory pudding tastes incredible because of the keto-friendly homemade Russian dressing. It’s a combination of Thousand Island dressing, Dijon mustard, and heavy whipping cream.

If you want to make it spicier, add some red pepper flakes.
Make sure you use all low-carb ingredients as you make the bread pudding. The bread should be low-carb and the Thousand Island Dressing needs to have no added sugar.
What To Eat With Pudding
This keto-friendly bread pudding has that classic Reuben taste layered into a bread pudding the whole family can enjoy! Serve with Asparagus and or with this Keto Cheesy Garlic Bread!

How To Store Cooked Meat
You can store leftovers, but I suggest eating them within a day or two so that the bread doesn’t become soggy. Store the leftover keto-friendly bread pudding in an airtight container.

Keep it in the refrigerator for up to two days.
Then, reheat it in the oven or air fryer. If you reheat it in the microwave, the bread will soften so much that it won’t be as tasty.

Directions

Preheat the oven to 350 degrees. Pour the melted butter over the bread cubes in a mixing bowl, and toss to combine.

Add the cheese, sauerkraut and corned beef to the mixing bowl with the bread, and stir to combine.

Layer the bread mixture into a well greased 9×13 baking dish.

In another mixing bowl, whisk together the eggs, heavy whipping cream, dijon, thousand island dressing and salt and pepper to taste.

Pour the mixture over the ingredients in the baking dish, and toss lightly to combine.

Bake for 20-25 minutes until the bread is browned.
