1poundLarge Shrimp peeled and deveined with tails removed
1/2poundGround Pork
4cupsCooked Cauliflower Rice excess water removed
2tbspOlive Oil
1/4Onion chopped
1Red Bell Pepper chopped
1/2cupCelery chopped
1Bay Leaf
2tspMinced Garlic
1tbspCajun Seasoning
1/2cupBeef Broth
1/4Green Onion chopped
Instructions
Heat the olive oil in a skillet over medium heat.
Add the ground pork to the skillet, and saute for 3 minutes.
Mix in the shrimp and half of the cajun seasoning. Saute until the meat is browned and the shrimp is cooked through. Remove and set aside.
Pour the onions, peppers and celery into the skillet, and saute until softened.
Mix in the garlic, and saute for another 30 seconds.
Stir in the cauliflower rice, bay leaf, beef broth and remaining seasoning. Simmer for 5 minutes.
Add the pork and shrimp back to the skillet, and stir to combine.
Garnish with green onions before serving.
