Ingredients

Shrimp

  • 1 pound Medium Shrimp peeled, deveined and tails removed
  • 3 tbsp Butter
  • 2 tsp Garlic q
  • Juice from 1/2 a Lemon
  • 1/4 cup Parmesan Cheese grated
  • Salt and pepper to taste

Dip

  • 6 ounces Cream Cheese softened
  • 1 1/2 cups Shredded Mozzarella Cheese
  • 2/3 cup Mayonnaise
  • 2/3 cup Sour Cream
  • 1/4 cup Parmesan Cheese
  • 1/4 cup Pork Rind Crumbs

Instructions

  • Preheat the oven to 375 degrees.
  • Melt the butter in a skillet over medium high heat.
  • Season the shrimp with salt and pepper to taste.
  • Stir in the shrimp, and sear until cooked through.
  • Mix in the garlic and lemon juice, and simmer for 1 minute.
  • Add in the parmesan cheese and remove from the heat.
  • Blend together the cream cheese, mozzarella cheese, sour cream and mayonnaise until well combined.
  • Pour the shrimp mixture into the cheese mixture, and stir to combine well.
  • Spread the mixture into a baking dish.
  • Stir together the pork rind crumbs and parmesan cheese, and sprinkle over the dip.
  • Bake for 25 minutes.
  • Serve with keto toast points or your choice of veggies for dipping.
