Keto Skillet Chicken and Mozzarella

Ingredients

  • 2 pounds Boneless Skinless Chicken Breasts cut into bite-sized pieces
  • 2 tbsp Olive Oil
  • 1 tbsp Butter
  • 2 tsp Minced Garlic
  • 1 cup Heavy Whipping Cream
  • 2 tbsp Tomato Paste
  • 3 cups Raw Spinach
  • 1/4 tsp Garlic Powder
  • 1 1/2 cups Mozzarella Cheese shredded
  • 1/4 cup Parmesan Cheese grated

Instructions

  • Add the olive oil to a skillet over medium high heat on the stove.
  • Place the chicken into the heated skillet and season with the garlic powder as well as salt and pepper to taste.
  • Saute the chicken until completely cooked through. Remove and set aside.
  • Add the butter to the skillet along with the minced garlic. Saute for 30 seconds.
  • Stir in the heavy whipping cream, tomato paste and salt and pepper to taste.
  • Mix the spinach into the sauce until wilted.
  • Add in the parmesan cheese, and stir to combine.
  • Simmer the sauce until thickened, and then return the chicken to the skillet.
  • Cook for several more minutes.
  • Top with the mozzarella cheese and cover until the cheese is melted.
  • Serve garnished with chopped parsley.
