6Boneless Skinless Chicken Breasts
2tbspOlive Oil
1/2Onion chopped
3tspMinced Garlic
1Roma Tomato diced
1/2Red Bell Pepper Chopped
1/2Orange Bell Pepper Chopped
1/3cupMatchstick Carrots
1/4cupGreen Onions chopped
1tbspBrowning Sauce
3tspDried Oregano
1tspSweet Paprika
1/2tspChili Powder
1/4tspAllspice
2tspSwerve Brown Sugar Substitute
1tspGinger Paste
2tbspSugar-Free Ketchup
3cupsChicken Broth
2Bay Leaves
Instructions
Mix together the onion, green onion, browning sauce, thyme, paprika, chili powder, all spice, ginger paste, garlic and salt and pepper to taste in a mixing bowl.
Add the chicken to the bowl, and toss to combine well. Cover and marinate for at least 2 hours.
Heat the olive oil in a skillet over medium high heat. Sear the chicken on both sides.
Stir together the tomato, red bell pepper, yellow bell pepper, carrots, Swerve, ketchup, chicken broth and bay leaves in a slow cooker.
Add the chicken to the slow cooker.
Cover and cook on low for 4 hours.
