Ingredients

  • 6 Boneless Skinless Chicken Breasts
  • 2 tbsp Olive Oil
  • 1/2 Onion chopped
  • 3 tsp Minced Garlic
  • 1 Roma Tomato diced
  • 1/2 Red Bell Pepper Chopped
  • 1/2 Orange Bell Pepper Chopped
  • 1/3 cup Matchstick Carrots
  • 1/4 cup Green Onions chopped
  • 1 tbsp Browning Sauce
  • 3 tsp Dried Oregano
  • 1 tsp Sweet Paprika
  • 1/2 tsp Chili Powder
  • 1/4 tsp Allspice
  • 2 tsp Swerve Brown Sugar Substitute
  • 1 tsp Ginger Paste
  • 2 tbsp Sugar-Free Ketchup
  • 3 cups Chicken Broth
  • 2 Bay Leaves

Instructions

  • Mix together the onion, green onion, browning sauce, thyme, paprika, chili powder, all spice, ginger paste, garlic and salt and pepper to taste in a mixing bowl.
  • Add the chicken to the bowl, and toss to combine well. Cover and marinate for at least 2 hours.
  • Heat the olive oil in a skillet over medium high heat. Sear the chicken on both sides.
  • Stir together the tomato, red bell pepper, yellow bell pepper, carrots, Swerve, ketchup, chicken broth and bay leaves in a slow cooker.
  • Add the chicken to the slow cooker.
  • Cover and cook on low for 4 hours.
