Have you heard of brown stew chicken? The name might make you think it’s a stew, but it isn’t exactly accurate.

Brown stew chicken is actually a Caribbean recipe. It’s made by braising chicken in brown gravy with vegetables and lots of spices.
The result is a juicy, flavorful chicken meal that smells as incredible as it tastes. I’ve made a few other really easy slow cooker recipes before (and I have a bunch of my favorites at the end of this post).
This brown stew chicken is easy, but it has a few extra steps that amplify the flavor. Don’t skip over these steps.
They are important and give the chicken the taste and texture it’s known for.
Slow Cooker Chicken Stew
There are three very important steps to making brown stew chicken. First, you need to marinate the chicken.

When you do this, the flavors infuse into the chicken breasts. Let it marinate for at least two hours but if you can let it marinate for six hours, that’s the magic number.
Then, sear the chicken in a skillet. You don’t have to cook the chicken completely at this step, just sear the outside.
The chicken breasts will cook in the slow cooker. Searing them locks in the juices and the flavors from the marinating.
Finally, cook the chicken in the slow cooker with the broth, veggies, and spices. This last step creates the finished product, and the hardest part is waiting for it to cook fully.
It smells incredible!
Keto Slow Cooker Chicken
I used chicken breasts because they are easy to find at the grocery store, and you can usually grab them for a great price (especially if you buy them frozen and in bulk).

This recipe will taste just as good if you make it with chicken thighs. Either boneless or bone-in are good choices.
If you can’t find browning sauce, use a keto-friendly brown gravy as an easy substitute. Since you only need about a tablespoon if it, you can use Worceshire sauce as a substitute for browning sauce, too.
What To Eat With Chicken
Keto brown stew chicken is made with a bunch of veggies—peppers, carrots, tomatoes, and onions—so you don’t have to add many sides to go with it. In fact, be careful with which sides you serve because each serving has 6 grams of net carbs.

Here are some side dishes that will taste amazing with the brown stew chicken. Try it with some garlic butter zucchini and squash.
They will perfectly complement all the savory herbs and flavors in this chicken.

How To Store Chicken
This chicken breast will taste amazing later on in the week. Store it in an airtight container and keep it in the refrigerator for about three days.

Directions

Heat the olive oil in a skillet over medium high heat. Sear the chicken on both sides.

Stir together the tomato, red bell pepper, yellow bell pepper, carrots, Swerve, ketchup, chicken broth and bay leaves in a slow cooker. Add the chicken to the slow cooker.

Cover and cook on low for 4 hours.
