Souvlaki Chicken
1 1/2poundsBoneless Skinless Chicken Thighs cut into pieces
1large Zucchini sliced and halved
6ounces Mushrooms sliced
1/2Red Bell Pepper chopped
1/2Yellow Bell Pepper chopped
1/2Onion chopped
Feta Cheese garnish
Parsley ygarnish
Tzatziki Sauce for serving
Souvlaki Chicken Marinade
1/4cupOlive Oil
1LemonJuiced
3tspMinced Garlic
1/2tspCumin
1tspRosemary
2tspOregano
Salt and Pepper to taste
Instructions
Add the chicken and vegetables to a large mixing bowl.
Pour the olive oil, lemon juice, garlic, cumin, rosemary, oregano and salt and pepper to taste into the bowl with the chicken and vegetables. Toss to combine well, and marinate for 2 hours or more.
Heat a large skillet over medium high heat, and add the mixture to the skillet.
Sear for 5-10 minutes, then reduce the heat to medium. Continue to saute until the chicken is cooked through.
Serve garnished with parsley and feta cheese, with tzatziki sauce on the side.
