Ingredients

  • 1 pound Ground Italian Sausage
  • 1 cup Feta Cheese crumbled
  • 1 tbsp Olive Oil
  • 6 mini Bell Peppers
  • 3 cups Fresh Spinach

Instructions

  • Preheat the oven to 350 degrees.
  • Slice the peppers in half lengthwise, and remove the seeds.
  • Place the peppers in a casserole dish and drizzle with the olive oil.
  • Bake for 10 minutes.
  • While the peppers are baking, saute the sausage in a skillet over medium high heat until completely browned.
  • Drain any excess grease, and add the spinach to the skillet. Saute just until the spinach is wilted.
  • Mix ⅔ of the feta cheese into the sausage and spinach mixture.
  • Stuff the peppers with the sausage mixture, and bake for an additional 10 minutes.
  • Sprinkle with the remaining feta and serve.
