The best thing about this recipe is that it is super versatile. There are so many different things you can change about it and you can eat it at basically any meal.
The peppers only bake in the oven for 20 minutes total. These scrumptious stuffed peppers will be ready in just 30 minutes! The feta cheese really add a deeper and richer flavor to the sweet peppers and spicy sausage. It’s the perfect combination.

I like to eat these stuffed peppers for a light lunch. Peppers, spinach, and sausage all give me everything I need to eat a filling lunch. I don’t really eat much with them when I eat them for lunch.
If you want to serve them for dinner, then maybe serve them with low-carb bell pepper nachos. They use lots of the same ingredients and so they taste fantastic together.
These stuffed peppers also make the perfect appetizer! Serve them with some keto bacon wrapped cabbage and some keto chili lime tortilla chips. That’s everything you need for a fun dinner with friends.
Keto Stuffed Bell Peppers
These stuffed peppers taste Heavenly when they are hot and bubbly out of the oven. You can also slice them in half and store them in meal prep containers for the week. They will lay flat and then store them with some keto spinach balls for a healthy lunch later in the week.
They will stay fresh in the refrigerator for up to 3 days.
Feta Stuffed Peppers
These feta stuffed peppers taste pretty mild. I like to make food that my kids can eat too, and they aren’t fans of spicy flavors. If you want your stuffed peppers to bring the heat, I suggest using some spicy sausage and then add some diced jalapenos.
This will give them an incredible kick! You can even use pepper jack cheese for more heat.
These are pretty basic stuffed peppers but if you want them to taste even more filling, add some cauliflower rice. Most stuffed peppers have rice or quinoa in them, and cauliflower rice is the perfect low-carb substitute.
Spinach and Feta Stuffed Peppers
It’s pretty incredible how delicious these peppers are with the combination of feta cheese and baby spinach. If you want, you can even add a little bit of kale.
I used Italian sausage, but for a leaner option, go with some ground chicken sausage. If you use chicken sausage, I suggest adding some red pepper flakes for a bit more flavor.

Ground Italian sausage
Feta cheese crumbled
Olive oil
Mini bell peppers
Fresh spinach
Instructions:
Preheat the oven to 350 degrees.
Slice the peppers in half lengthwise, and remove the seeds.
Place the peppers in a casserole dish and drizzle with the olive oil.
Bake for 10 minutes.
While the peppers are baking, saute the sausage in a skillet over medium high heat until completely browned.
Drain any excess grease, and add the spinach to the skillet. Saute just until the spinach is wilted.
Mix ⅔ of the feta cheese into the sausage and spinach mixture.
Stuff the peppers with the sausage mixture, and bake for an additional 10 minutes.
Sprinkle with the remaining feta and serve.
