Keto Taco Bell Mexican Pizza

Remake the classic dish from Taco Bell. This keto Mexican pizza is made with homemade low-carb tortillas - kids love it too!

Ingredients

Low-Carb Tortillas

  • 1 1/2 cups Mozzarella Cheese shredded
  • 2 ounces Cream Cheese
  • 1 large Egg
  • 1 1/4 cups Almond Flour
  • 1 tsp Baking Powder

Mexican Pizza Toppings

  • 1/2 pound Ground Beef
  • 1 tbsp Mexican Spice Blend
  • 1 Roma Tomato chopped
  • 1/4 cup Green Onions chopped
  • 1 cup Taco Blend Cheese shredded
  • 1/4 cup Enchilada Sauce

Instructions

  • Preheat the oven to 350 degrees.
  • Add the cream cheese and mozzarella cheese to a bowl that is microwave safe.
  • Heat for 30 second intervals until the cheeses are melted and combined.
  • Add the cheese to a mixing bowl with the remaining crust ingredients, and blend until smooth.
  • Divide the dough in half.
  • Roll each piece of dough out thin between two pieces of parchment paper. Use a large pot lid or pan to cut out a large tortilla shape from the dough.
  • Place the tortillas on a parchment lined baking sheet, and bake for 10-15 minutes, turning halfway through the baking time.
  • While the tortillas are baking, brown the ground beef completely in a skillet over medium high heat. Drain any excess grease.
  • Place one tortilla on the baking sheet, and top with the ground beef and half the shredded taco blend cheese.
  • Add the other tortilla on top of the meat mixture.
  • Spread the enchilada sauce over the top tortilla.
  • Sprinkle with the tomatoes, green onion and remaining cheese.
  • Bake for 10 minutes, slice and serve.
