This recipe isn’t for the Italian cheese and tomato sauce pizza. It’s for something you can enjoy on Taco Tuesday or whenever you are craving Mexican food takeout. It’s a fun lunch and kids love to help build their own mini Mexican pizzas too!
This recipe takes about 30 minutes prep time and 25 minutes to cook. That’s still faster than the time it takes delivery to arrive – and fresh food made in your kitchen always tastes better, too.
Have fun with the toppings you add – just remember to choose low-carb toppings. In addition to the ones I used, you could add chopped green peppers and some avocado on top, along with some sour cream.
Taco Bell Mexican Pizza
Do you remember the Taco Bell Mexican Pizza? It was taco meat in between two crispy tortillas and topped with tomatoes, cheese, and sauce.
Before I was on the keto diet, it was one of my favorite things to order. I was thrilled when I finally perfected a low-carb version. There are 6 grams net carbs in each small pizza. If you want, you could cut the pizza in half and eat it with some keto cauliflower cilantro lime rice for a filling and low-carb lunch!

One of the best things about this pizza is that you can customize it. If you don’t want a Mexican pizza, make a cheese one. Use sugar-free tomato sauce and your favorite pizza toppings.

Keto Taco Bell Mexican Pizza
This keto Taco Bell Mexican pizza fits right in with your meal prep too. Store the dry toppings in one bowl, and the enchilada sauce in another one. Then, store the tortillas in a separate resealable food storage bag.
If you keep everything separated like this and keep them in the refrigerator, they will stay fresh for up to 3 days.
Don’t try to assemble the pizza and then store it. The sauce and the ingredients will make the homemade tortillas too soft.
Keto Tortilla Recipe
You’ll want to save this recipe just to keep this tortilla recipe safe. You can use these tortillas for so many other purposes. They are one of the best low-carb bread recipes I have made. If you don’t use them as pizza, top them with lunch meat and cheese and then they can be a wrap!
You won’t even miss bread when you have this recipe. I used my tried and true fathead dough recipe to make these tortillas. It’s a combination of melted mozzarella cheese, cream cheese, and almond flour (among a few other baking ingredients).
Please remember to use almond flour, not almond meal. They might look the same, but the almond meal has bits of almond skins in it, which will make your tortillas taste grainy.

Ingredients:
For the tortillas:
Shredded Mozzarella cheese
Cream cheese
Egg
Almond flour
Baking powder
For the toppings:
Ground beef
Mexican spice blend
Roma tomato
Green onions
Taco blend cheese
Enchilada sauce
Instructions:
1. Preheat the oven to 350 degrees.
2. Add the cream cheese and mozzarella cheese to a bowl that is microwave safe.
3. Heat for 30 second intervals until the cheeses are melted and combined.
4. Add the cheese to a mixing bowl with the remaining crust ingredients, and blend until smooth.
5. Divide the dough in half.
6. Roll each piece of dough out thin between two pieces of parchment paper. Use a large pot lid or pan to cut out a large tortilla shape from the dough.
7. Place the tortillas on a parchment lined baking sheet, and bake for 10-15 minutes, turning halfway through the baking time.
8. While the tortillas are baking, brown the ground beef completely in a skillet over medium high heat. Drain any excess grease.
9. Place one tortilla on the baking sheet, and top with the ground beef and half the shredded taco blend cheese.
10. Add the other tortilla on top of the meat mixture.
11. Spread the enchilada sauce over the top tortilla.
12. Sprinkle with the tomatoes, green onion and remaining cheese.
13. Bake for 10 minutes, slice and serve.
