Ingredients

Thai Ground Turkey

  • 1 1/2 pounds Ground Turkey
  • 6 large Lettuce Leaves
  • 1/2 Medium Onion chopped
  • 1 Red Bell Pepper chopped
  • 2 tsp Ginger Paste
  • 2 tsp Minced Garlic
  • 2 tbsp Chopped Peanuts for garnish
  • 2 tbsp Fresh chopped cilantro for garnish
  • 2 tbsp Fresh chopped Green Onions for garnish

Thai Peanut Sauce

  • 2 tbsp Natural Chunky Peanut Butter
  • 1 tbsp Rice Vinegar
  • 2 tbsp Soy Sauce
  • 1 tbsp Water
  • 1/2 tsp Sesame Oil
  • 1 tsp Swerve Brown Sugar Substitute

Instructions

  • Saute the ground turkey, onions and peppers in a skillet over medium high heat on the stove until the meat is completely browned, and the vegetables have softened.
  • Drain any excess liquid.
  • Add in the ginger and garlic, and saute another minute.
  • Mix together the ingredients for the sauce until well combined.
  • Pour the sauce over the mixture, and simmer until most of the liquid is absorbed.
  • Spoon the mixture onto large lettuce wraps, and top with the cilantro, green onions and peanuts before serving.
