1 1/2poundsGround Turkey
6largeLettuce Leaves
1/2Medium Onionchopped
1Red Bell Pepper chopped
2tspGinger Paste
2tspMinced Garlic
2tbspChopped Peanuts for garnish
2tbspFresh chopped cilantro for garnish
2tbspFresh chopped Green Onions for garnish
Thai Peanut Sauce
2tbspNatural Chunky Peanut Butter
1tbspRice Vinegar
2tbspSoy Sauce
1tbspWater
1/2tspSesame Oil
1tspSwerve Brown Sugar Substitute
Instructions
Saute the ground turkey, onions and peppers in a skillet over medium high heat on the stove until the meat is completely browned, and the vegetables have softened.
Drain any excess liquid.
Add in the ginger and garlic, and saute another minute.
Mix together the ingredients for the sauce until well combined.
Pour the sauce over the mixture, and simmer until most of the liquid is absorbed.
Spoon the mixture onto large lettuce wraps, and top with the cilantro, green onions and peanuts before serving.
