Hey Thai food fans, this one is for you! It’s a quick lunch that has all your favorite Thai flavors mixed together. Since Thailand is right on the water, you will often find Thai recipes are both sweet and salty, with a lot of seafood and fish oil used. It’s also pretty spicy too.
These lettuce wraps can be as mild or hot as you make them. In fact, there are a lot of different ways that you can customize these lettuce wraps to make them taste just how you want them to.
Healthy Thai Ground Turkey
These lettuce wraps are high in protein, and fiber, and will fuel your body with a bunch of healthy vitamins and antioxidants. Turkey is a lean source of protein, and peanut butter and peanuts are fantastic sources of healthy fats and protein too.
If you don’t have ground turkey, you can use ground chicken in its place for a lean choice, or ground beef if you don’t mind the extra fat.
To use this in your meal prep, I suggest storing the ground turkey filling separate from both the lettuce wraps and the peanut sauce. Then, when you are ready to eat it, just heat the filling and sauce and assemble it.
Ground Turkey Vs Ground Beef
I have been known to use ground turkey as a replacement for ground beef in a lot of recipes. They have very similar textures and work well in a lot of the same recipes.
The biggest difference between ground beef and ground turkey is that beef has more fat than turkey. You will have to drain the beef after you brown it, but you won’t have as much grease to drain from the turkey.
Whenever I cook with ground turkey, I tend to use either more seasoning or stronger flavors because turkey tends to be bland as well.

When it comes to using lettuce for wraps, you need one that is large enough to hold in your hand and sturdy enough to hold your food. My three favorite types of lettuce for wraps are iceberg, bibb, and Boston lettuce.
The freshness of the lettuce is another thing that will make or break it as a wrap. If the lettuce is too old, it will begin to wilt and be too flimsy to hold your meat.
What To Eat With Lettuce Wraps
These lettuce wraps are basically a complete meal. You have the meat and vegetables and a filling sauce, all in one recipe. The best thing you can eat with it is a light soup. A low-carb vegetable soup is a perfect thing to share on the side.

Ingredients:
Ground turkey
Large lettuce leaves
Medium onion
Red bell pepper
Ginger paste
Minced garlic
Peanuts for garnish
Cilantro for garnish
Green onions for garnish
For the sauce:
Natural chunky peanut butter
Rice vinegar
Soy sauce
Water
Sesame oil
Swerve brown sugar substitute
Instructions:
Saute the ground turkey, onions and peppers in a skillet over medium high heat on the stove until the meat is completely browned, and the vegetables have softened.
Drain any excess liquid.
Add in the ginger and garlic, and saute another minute.
Mix together the ingredients for the sauce until well combined.
Pour the sauce over the mixture, and simmer until most of the liquid is absorbed.
Spoon the mixture onto large lettuce wraps, and top with the cilantro, green onions and peanuts before serving.

- 6 large Lettuce Leaves
- 1/2 Medium Onion chopped
- 1 Red Bell Pepper chopped
- 2 tsp Ginger Paste

- 2 tbsp Chopped Peanuts for garnish
- 2 tbsp Fresh chopped cilantro for garnish
- 2 tbsp Fresh chopped Green Onions for garnish
Thai Peanut Sauce
- 2 tbsp Natural Chunky Peanut Butter
- 1 tbsp Rice Vinegar
- 2 tbsp Soy Sauce
- 1 tbsp Water
- 1/2 tsp Sesame Oil
- 1 tsp Swerve Brown Sugar Substitute
