Salad
2cupsCabbage chopped
4cupsKale chopped
1Leak green removed and sliced lengthwise
2tbspOlive Oil
2tbspParmesan Cheesegrated
Salt and Pepper to taste
1/4cupRed Onion sliced thinly
1/4cupSlivered Almonds
Dressing
1tbspOlive Oil
2tbspLemon Juice
1tspMinced Garlic
1tspSugar-Free Honey
Instructions
Preheat the oven to 400 degrees.
Add the cabbage to a baking sheet, and drizzle with some of the olive oil, parmesan cheese and salt and pepper to taste.
Bake the cabbage for 20-25 minutes, or until crispy on the edges and done to your liking.
Place the kale and leeks on another baking sheet, drizzle with the remaining olive oil, parmesan cheese and salt and pepper to taste.
Bake for 15-20 minutes. You can remove the kale when crispy, and continue to cook the leaks if needed.
Toss together the baked greens, and place into serving bowls.
Top with the almonds and red onions.
Whisk together the olive oil, lemon juice, garlic and sugar free honey for the dressing, and drizzle over the salad before serving.
