We all have our favorite salad to eat for lunch. And it’s usually served cold. Maybe you prefer an egg salad or a chicken salad.
Maybe you like something with lettuce and chopped veggies. But, have you ever had a veggie-filled salad that you bake?
When I saw this recipe on TikTok I knew I had to recreate it. You can’t beat the way the tangy-sweet dressing enhances the tender, roasted veggies.
And if you’re a little nervous about the kale, don’t be! When you bake it, it actually tastes a bit less bitter.
This is a must for the days when you know you need more vegetables, but don’t want another chopped salad or broccoli.

Vegetarian Salad
Meat usually doesn’t increase the carbs in recipe, so if you wanted, you could add some shredded chicken or shredded pork loin to the baked salad without adding carbs.
But I love how this tastes without any meat. The parmesan cheese and slivered almonds add just enough protein to make this salad hearty.
Plus, there’s protein in kale and cabbage! It’s the perfect salad to serve vegetarians.
What To Eat With Salad
I love to eat this salad for lunch. If you need some meat, just grab some deli lunch meat or rotisserie chicken.
It’s also the perfect side dish to add to your dinner table. The mild flavors in the baked salad go perfectly with any main course that you bake.

Ingredients
Salad:
- Cabbage
- Kale
- Leak
- Olive Oil
- Parmesan Cheese
- Red Onion
- Slivered Almonds
Dressing:
- Olive Oil
- Lemon Juice
- Garlic
- Sugar-Free Honey
Directions
Preheat the oven to 400 degrees. Add the cabbage to a baking sheet, and drizzle with some of the olive oil, parmesan cheese and salt and pepper to taste.
Bake the cabbage for 20-25 minutes, or until crispy on the edges and done to your liking.
Place the kale and leeks on another baking sheet, drizzle with the remaining olive oil, parmesan cheese and salt and pepper to taste.
Bake for 15-20 minutes. You can remove the kale when crispy, and continue to cook the leaks if needed.
Toss together the baked greens, and place into serving bowls. Top with the almonds and red onions.
Whisk together the olive oil, lemon juice, garlic and sugar free honey for the dressing, and drizzle over the salad before serving.
