4Boneless Skinless Chicken Thighs
1tbspOlive Oil
2tspMinced Garlic
2tbspTomato Paste
1cup Heavy Whipping Cream
1tspItalian Seasoning
3cupsFresh Spinach
1/4cupBacon crumbled
1/4cupFeta Cheese crumbled
Instructions
Add the olive oil to a large skillet over medium high heat on the stove.
Place the chicken thighs into the heated skillet, seasoned with salt and pepper to taste on each side.
Cook the chicken until completely cooked through and browned on both sides. Set aside.
Reduce the heat in the skillet to medium and add in the minced garlic and tomato paste. Saute for 30 seconds.
Whisk the heavy whipping cream into the skillet, and sprinkle in the Italian seasoning.
Continue to saute the sauce until thickened.
Place the spinach into the skillet and cook until wilted.
Add the chicken back into the skillet and drizzle with the sauce.
Garnish with bacon and feta cheese crumbles before serving.
