The entire meal is made in the same skillet. It only takes 30 minutes to make, from start to finish! The best thing about this recipe is that it doesn’t require lots of chopping or preparation before you cook. You can just start cooking it in your skillet and it’s ready in 30 minutes!
Plus, if you enjoy meal prep, then keep this recipe on your list. It reheats really well for meal prep. Just heat it up in a skillet or even the microwave. When you store it for meal prep, keep it in your favorite sealed container in the refrigerator for up to 5 days.
Low Carb Chicken Dinner
Chicken is one of my favorite meats to use for dinner. It’s just so easy to use and cook with. Chicken needs to cook to an internal temperature of 165 degrees F – which you’ll reach within 30 minutes in the skillet.
This recipe only has 5g net carbs per serving! It has everything you need for a meal – the chicken and the spinach. If you wanted to add another side dish, this would taste really delicious with the creamy sauce drizzled on some asparagus.
You can also serve it with some cauliflower mash and drizzle some of the cream sauce on it like you would with gravy. Cauliflower has such a mild flavor that you’ll be able to really taste the creamy sauce on top.

I can see this sauce tasting delicious on other types of meat too. Chicken just has the mild flavor that mixes with his creamy sauce the best! I used chicken thighs, but you can use chicken breast in it as a substitute.
Try this recipe with pork chops! It will taste just as delicious. You only need to cook the pork to an internal temperature of 145 degrees F.
Tomato Cream Sauce Recipe
What really makes this recipe stand out is the creamy sauce! It’s made with a combination of tomato paste and heavy whipping cream. If you can’t find any heavy whipping cream, you can use heavy cream in its place. There really isn’t a dairy-free alternative to heavy whipping cream that has the exact same consistency and taste. The closest one I could find is soy milk and olive oil.
When you mix tomato paste with heavy whipping cream, the result is a zesty and creamy sauce! It’s amazing.

Ingredients:
Skinless chicken thighs
Olive oil
Minced garlic
Tomato paste
Heavy whipping cream
Italian seasoning
Spinach
Bacon crumbles
Feta cheese
Salt and pepper to taste
Instructions:
Add the olive oil to a large skillet over medium high heat on the stove.
Place the chicken thighs into the heated skillet, seasoned with salt and pepper to taste on each side.
Cook the chicken until completely cooked through and browned on both sides. Set aside.
Reduce the heat in the skillet to medium and add in the minced garlic and tomato paste. Saute for 30 seconds.
Whisk the heavy whipping cream into the skillet, and sprinkle in the Italian seasoning.
Continue to saute the sauce until thickened.
Place the spinach into the skillet and cook until wilted.
Add the chicken back into the skillet and drizzle with the sauce. Garnish with bacon and feta cheese crumbles before serving.
