Ingredients

  • 1 tbsp avocado oil
  • 1 lb ground turkey
  • 1/2 white onion diced
  • 1/2 red bell pepper diced
  • 1 4 oz can green chilis
  • 3 tbsp taco seasoning See link above for homemade Taco seasoning recipe.
  • 12 oz frozen cauliflower rice
  • 1 cup shredded Mexican cheese

Instructions

  • Heat oil in a skillet over medium heat.
  • Once the oil is hot add turkey.
  • Crumble turkey and cook through.
  • Add in diced onion, bell pepper, and taco seasoning and cook until onion and paper have softened.
  • Stir in chiles, and cauliflower rice. Cook for 5 or until moisture has evaporated.
  • Sprinkle with cheese and cover skillet until cheese has melted.
  • Top with cilantro, jalapeños, and diced avocado
