Keto Mexican Food
What is your favorite type of Mexican food? There is a way to incorporate it into this skillet meal. Here are a few ways to change this up so it’s different every time.
- Enchilada – Top this skillet meal with your favorite low-carb enchilada sauce. You can make your own with butter, tomato sauce, and your favorite spices.
- Taco Salad – Put this skillet meal on a bed of chopped lettuce for a hearty taco salad
- Burrito Bowl – Top it with sour cream and guacamole for a scrumptious burrito bowl
What’s In The Keto Turkey Mexican Skillet Recipe
I used the freshest ingredients I could for my low-carb Mexican skillet recipe. Here’s what I used along with any substitutions or additions.
- Avocado Oil – this has a really high-fat point, so it’s great for skillet meals
- Ground Turkey – substitute with ground beef, ground chicken, or ground pork sausage
- White Onion – use frozen chopped onion to save yourself some time
- Red bell pepper – the color of the peppers isn’t as important, you can use yellow or green too
- Green chilis – You can substitute with diced tomatoes with green chilis too
- Taco seasoning – If you want to control the spice level, you can even make your own
- Cauliflower rice – Save time by using frozen cauliflower rice
- Shredded Cheese – I used Mexican shredded cheese but shredded cheddar works too
Easy Keto Dinner
Meal prepping can save you so much time in the kitchen – at both lunch and dinner. There are a few ways that you can meal prep this.
One way is to store all the ingredients in separate containers in the refrigerator. Then, when you are ready for your meal, just dump them all in the skillet, fry it up, and your meal is ready.
Another option is to prepare the skillet meal a day in advance. Then, store the fully-cooked dish in a sealed container in the refrigerator. When you are ready to eat, just heat it on the stove or in the microwave.
Low-Carb Mexican Skillet
Add as many toppings as you want to this skillet dish. If your family isn’t on the keto diet, you can save the cauliflower rice for yourself and serve this on top of white rice for them.
Remember to keep track of your macros. Don’t add very many tomatoes to it if you are trying to stay within a certain carb limit – and always avoid corn.
