1poundGreen Beans trimmed
2tbspWater
2tbspOlive Oil
1/4cupRed Onion thinly sliced
1tspDijon Mustard
2tspMinced Garlic
1squeeze Fresh Lemon
1/4cupSliced Almonds
1/4cupCrumbled Feta
Instructions
Place the green beans and water in a skillet over medium heat. Cover and simmer until the green beans are a crisp tender.
Remove the lid and drain any excess water. Reduce the heat to medium low.
Stir in the red onions, garlic, dijon, almonds, lemon juice and salt and pepper to taste. Saute for 1 minute longer.
Remove from the heat, and let cook for a few minutes.
Stir in the feta cheese and serve warm.
