Ingredients

  • 1 pound Green Beans trimmed
  • 2 tbsp Water
  • 2 tbsp Olive Oil
  • 1/4 cup Red Onion thinly sliced
  • 1 tsp Dijon Mustard
  • 2 tsp Minced Garlic
  • 1 squeeze Fresh Lemon
  • 1/4 cup Sliced Almonds
  • 1/4 cup Crumbled Feta

Instructions

  • Place the green beans and water in a skillet over medium heat. Cover and simmer until the green beans are a crisp tender.
  • Remove the lid and drain any excess water. Reduce the heat to medium low.
  • Stir in the red onions, garlic, dijon, almonds, lemon juice and salt and pepper to taste. Saute for 1 minute longer.
  • Remove from the heat, and let cook for a few minutes.
  • Stir in the feta cheese and serve warm.
