Ingredients

  • 2 tbsp Butter
  • 1/2 Onion chopped
  • 4 ounces Canned Green Chilis
  • 2 tsp Minced Garlic
  • 5 ounces Cream Cheese softened
  • 4 cups Chicken Broth
  • 1/4 cup Sour Cream
  • 1 cup Monterey Jack Cheese shredded
  • 2 tbsp Cilantro chopped
  • 1 tsp Cumin
  • 1/2 tsp Oregano
  • 1/4 tsp Paprika
  • 1/4 tsp Chili Powder
  • Cayenne Pepper to taste
  • Salt and pepper to taste
  • 1 large Can of Chicken Breast
  • 1 Jalapeno sliced for garnish
  • Lime Wedges for garnish

Instructions

  • Add the butter to a pot over medium heat.
  • Saute the onions in the skillet until softened.
  • Mix in the garlic, and saute for 30 seconds longer.
  • Place 1 cup of chicken broth, the cream cheese and sour cream into a food processor or blender, and pulse until smooth.
  • Pour the rest of the chicken broth and the cream cheese mixture into the pot.
  • Stir in the green chilis, cumin, oregano, paprika, chili powder, cayenne and salt and pepper to taste.
  • Mix in the canned chicken, and simmer until the mixture thickens and heats through.
  • Remove from the heat, and garnish with the cilantro, monterey jack cheese and jalapeno slices before serving.
