There is nothing better in the world than a bowl of hot chili. This keto white chicken chili is a popular recipe every winter. It’s super creamy, thanks to the combination of cream cheese and sour cream.
Plus, the hand-picked mixture of spices work together to create an aromatic chili that will bring everyone to the table.
This is a wonderful recipe to make when you need something that cooks quickly! Canned chicken is already pre-cooked, so the most time-consuming part of this recipe is waiting for it all to heat up.
White Chili With Canned Chicken
I like using canned chicken because it lasts so long in the pantry that I can keep a bunch of it on-hand and use it when I need it. Canned chicken is so much more affordable than fresh chicken, too!
You don’t have to use canned chicken. If you have leftover spatchcock chicken, feel free to use that instead. This chili is a wonderful way to use up leftover chicken that you make.
White Chicken Chili
Don’t be overwhelmed by the longer list of ingredients. There are still just 5 grams net carbs in each serving! Plus, each ingredient is so important. You could use jarred taco seasoning instead of my blend of spices, but always read the labels.
Don’t use anything that has sugar in it.
It’s really easy to make this chili extra spicy, if you want. Just chop up a poblano pepper and add it to the broth! For even more heat, add some red pepper flakes and more green chilis.
Keto Chicken Chili
Make a huge pot of keto chicken chili and eat it throughout the week as part of your meal prep. Store it in your resealable meal prep containers and keep it in the refrigerator for up to three days.
Just make sure you store it without the jalapeno slices as the garnish, unless you really like spicy chili! As it sits, the jalapenos will infuse into the chili, making it hotter by the day.
What To Eat With Chicken Chili
This is a very filling bowl of chili by itself, so you don’t have to cook very many sides to round it out. Some keto Mexican street cauliflower is a really delicious side dish to go with the chili.

Ingredients:
Butter
Onion
Canned green chilis
Minced garlic
Cream cheese
Chicken broth
Sour cream
Monterey jack cheese shredded
Cilantro
Cumin
Oregano
Paprika
Chili powder
Cayenne
Salt and pepper
Large can of chicken breast
Jalapeno
Lime wedges
Instructions:
Add the butter to a pot over medium heat. Saute the onions in the skillet until softened.
Mix in the garlic, and saute for 30 seconds longer.
Place 1 cup of chicken broth, the cream cheese and sour cream into a food processor or blender, and pulse until smooth.
Pour the rest of the chicken broth and the cream cheese mixture into the pot.
Stir in the green chilis, cumin, oregano, paprika, chili powder, cayenne and salt and pepper to taste.
Mix in the canned chicken, and simmer until the mixture thickens and heats through.
Remove from the heat, and garnish with the cilantro, monterey jack cheese and jalapeno slices before serving.

- 1/2 Onion chopped
- 4 ounces Canned Green Chilis
