Ingredients

  • 2 medium Zucchini shredded with the moisture squeezed out as much as possible
  • 2 large Eggs
  • 1/4 cup Parmesan Cheese grated
  • 1 pound Ground Beef
  • 1 tsp Italian Seasoning
  • 2 tsp Minced Garlic
  • 1 1/2 cups Low-Carb Marinara Sauce
  • 1 1/2 cups Shredded Mozzarella Cheese
  • 1/4 Red Onion sliced thinly
  • 1/4 cup Pepperoni Slices
  • 1/4 Green Bell Pepper sliced thinly
  • 1/4 cup Sliced Black Olives

Instructions

  • Preheat the oven to 400 degrees.
  • Add the zucchini, parmesan cheese and two large eggs to a mixing bowl. Season with salt and pepper to taste, and press into the bottom of a well greased 9x13 baking dish.
  • Bake for 20 minutes.
  • While the mixture is baking, add the ground beef to a skillet over medium high heat.
  • Saute the meat until completely browned.
  • Mix in the Italian seasoning, minced garlic and salt and pepper to taste. Saute for 30 seconds.
  • Reduce the heat to medium low and pour in the marinara sauce.
  • Spread the meat sauce over the zucchini base in the baking dish.
  • Top with the shredded mozzarella.
  • Layer the red onion, green bell peppers, pepperoni slices and black olives on top.
  • Bake for another 10-15 minutes.
