You can still enjoy all of that while on keto – you just have to use low-carb ingredients! My keto cauliflower pizza bites will always be one of my favorite keto pizza recipes but a casserole is a simple way to make a bunch of food all at once.
After making Keto Ground Beef Pizza Casserole, I wanted to find a way to sneak even more vegetables in. Fiber is a really important part of keto, and I’m constantly needing more of it.
So, I created a zucchini pizza casserole. When you make a shredded zucchini crust, the flavor and texture of the squash changes.
All you taste is the cheese, marinara sauce, and all those incredible toppings.
Zucchini Pizza Casserole
In order to get the perfect zucchini crust, you’ll need to shred or grate two medium zucchini (or one large one). You could do this by hand with a cheese grater, but it’s so much faster if you use a food processor.
Can you use zucchini noodles instead? I don’t recommend it because Zoodles tend to be thicker, which will make them stand out too much in the pizza crust.
Oh, and one more really important tip. You’ll need to remove as much moisture as you can before mixing the zucchini with the eggs and parmesan cheese.
If you leave all of the moisture from the zucchini in it, the crust will be soggy. To remove the moisture, place the shredded zucchini in a cheesecloth and wring it until no more water comes out. Easy!
Baked Pizza Casserole
It only takes about 30 minutes for the casserole to bake, so it’s a perfect meal for busy weeknights – especially if you prep the zucchini ahead of time. Add it to your list of favorite pizza-inspired recipes.

What To Eat With Pizza
This pizza casserole tastes delicious with classic sides like keto garlic knots. For something cold, add some easy keto broccoli salad to the table or add some keto TikTok mini peppers and cucumber salad for more color.
Some keto dinner rolls and fluffy cauliflower mash will also taste perfect with the cheesy zucchini pizza casserole.
How To Store Cooked Zucchini
This is the perfect meal to add to your weekly meal prep! Store your cooked zucchini crust pizza in an airtight food storage container and keep it in the refrigerator for up to three days.
You can also freeze it! Store the cooked pizza casserole in a freezer-safe bag or food container and keep it in the freezer for up to six months and then reheat the casserole in a skillet, air fryer, or microwave.

Ingredients
- Zucchini
- Eggs
- Parmesan Cheese
- Ground Beef
- Italian Seasoning
- Minced Garlic
- Low-Carb Marinara Sauce
- Shredded Mozzarella Cheese
- Red Onion
- Pepperoni
- Green Bell Pepper
- Black Olives
Instructions
Preheat the oven to 400 degrees. Add the zucchini, parmesan cheese and two large eggs to a mixing bowl. Season with salt and pepper to taste, and press into the bottom of a well greased 9×13 baking dish.
Bake for 20 minutes.
While the mixture is baking, add the ground beef to a skillet over medium high heat. Saute the meat until completely browned.
Mix in the Italian seasoning, minced garlic and salt and pepper to taste. Saute for 30 seconds.
Reduce the heat to medium low and pour in the marinara sauce.
Spread the meat sauce over the zucchini base in the baking dish.
Top with the shredded mozzarella.
Layer the red onion, green bell peppers, pepperoni slices and black olives on top.
Bake for another 10-15 minutes.

- 2 large Eggs
- 1/4 cup Parmesan Cheese grated
- 1 pound Ground Beef
- 1 tsp Italian Seasoning
- 2 tsp Minced Garlic
- 1 1/2 cups Low-Carb Marinara Sauce
- 1 1/2 cups Shredded Mozzarella Cheese
- 1/4 Red Onion sliced thinly
- 1/4 cup Pepperoni Slices
- 1/4 Green Bell Pepper sliced thinly
- 1/4 cup Sliced Black Olives
