Ingredients
1turkey breastwhole
1cupchicken stock
4tbspbutter
2 tsp paprika
1tspgarlic powder
1/2tspsalt and pepper
1tsp lemon zest
1lemon juiced
Low Carb Gravy
4tbspdairy butter
2cupschicken broth
1tsparlic powder
1tspxanthan gum
Salt, pepper to taste.
Instructions
If your turkey breast comes with a gravy packet, remove and discard.
Take 2 Tbsp of butter, and spread under the skin of the turkey. Take the remaining 2 Tbsp of butter, melt in the microwave, then pour over the turkey.
Rub the turkey with the spices and the lemon zest.
Place Instant Pot trivet in the pot. Pour 1 cup of chicken stock on the bottom.
Close the Instant Pot and set to Manual. Cook on High Pressure for 45 minutes.
Let the pressure release naturally.
Carefully remove the turkey from the pot.
Gravy
Heat butter in small pot over medium heat.
Whisk in garlic powder, salt and pepper and xantham gum.
Stir in chicken broth and simmer until thickens.
