Juicy chicken, crispy greens and fresh strawberries - all covered in a balsamic vinaigrette. Strawberry chicken salad is delicious!

Ingredients

Salad

  • 8 cups Salad Greens
  • 2 Boneless Skinless Chicken Breasts cut in half lengthwise
  • 3 tbsp Olive Oil
  • 2 tbsp Sugar-Free Honey
  • 3 tbsp Balsamic Vinegar
  • 2 tsp Minced Garlic
  • Salt and Pepper to taste
  • 1/2 cup Sliced Strawberries
  • 1/4 Red Onion sliced thinly
  • 2 tbsp Sliced Almonds
  • 1/3 cup Feta Cheese crumbled

Vinaigrette

  • 2 tbsp Balsamic Vinegar
  • 3 tbsp Olive OIl
  • 1 tbsp Sugar-Free Honey
  • 2 tsp Dijon Mustard

Instructions

  • Add 3 Tbsp olive oil, 2 Tbsp sugar free honey, 3 Tbsp balsamic vinegar, minced garlic and salt and pepper to taste to a mixing bowl, and whisk to combine well.
  • Place the chicken into the mixing bowl, and toss to coat well in the marinade.
  • Marinate the chicken for a minimum of 1 hour.
  • Preheat the grill, and grill the chicken evenly on both sides until cooked through completely. Cook times will vary depending on the thickness of your breasts.
  • Layer the salad greens in a large serving bowl.
  • Top with the strawberries, red onions, feta, almonds and sliced chicken.
  • Whisk together the vinaigrette ingredients in a bowl, and drizzle over the salad.
  • Toss the salad well before serving.
