Balsamic Strawberry Salad
Balsamic vinegar is one of my favorite ingredients to cook with. It has a subtle sweetness that enhances sweet foods like tomatoes or strawberries. It’s what made my keto balsamic tomato and herb chicken thighs taste so out of this world.
And it’s what made this salad taste so good that I actually found myself looking forward to eating salad for lunch. It all starts with fresh, crispy salad greens.
Then, you add the plump strawberries, crumbled feta cheese and sliced almonds. The chicken tastes extra juicy because it’s marinated in sugar-free honey, balsamic vinegar, and garlic.
But I think the honey mustard balsamic vinaigrette really makes it stand out!
Strawberry Chicken Salad
If you don’t have a lot of time for cooking this week, pre-make parts of this salad. Then, all you have to do is mix it together and top it with the dressing! Marinate and cook the chicken, slice it, and then store it in an airtight container. Keep it in the refrigerator for up to three days.
If you want to store sliced red onion in the refrigerator, I suggest keeping them in a bit of water. This will make them less aromatic (and the smell of onion won’t take over your refrigerator).
Homemade Balsamic Vinaigrette
The best part of this salad is the lip-smackingly good balsamic vinaigrette. It has a honey mustard base that’s all tied together with balsamic vinegar and olive oil.
If you don’t have olive oil, you can use avocado oil as the healthy fat instead. And trust me – buy some sugar-free honey.
It’s one of the best sweeteners out there. It tastes just like real honey but without all the carbs and I love how it makes this vinaigrette so sticky-sweet.
How Long Do Strawberries Last
Fresh strawberries will last about a week in the refrigerator. The way to keep strawberries fresh and last the longest is to keep them dry and cold.
As soon as they get too wet, they will begin to rot. The best way to store fresh strawberries is to line a glass bowl with a paper towel and then cover it with a lid and eat the strawberries as soon as possible.

The Salad:
- Salad Greens
- Chicken Breasts
- Olive Oil
- Sugar-Free Honey
- Balsamic Vinegar
- Minced Garlic
- Sliced Strawberries
- Red Onion
- Sliced Almonds
- Feta Cheese
Vinaigrette
- Balsamic Vinegar
- Olive Oil
- Sugar-Free Honey
- Dijon Mustard
Directions
Add 3 Tbsp olive oil, 2 Tbsp sugar free honey, 3 Tbsp balsamic vinegar, minced garlic and salt and pepper to taste to a mixing bowl, and whisk to combine well.
Place the chicken into the mixing bowl, and toss to coat well in the marinade. Marinate the chicken for a minimum of 1 hour.
Preheat the grill, and grill the chicken evenly on both sides until cooked through completely. Cook times will vary depending on the thickness of your breasts.
Layer the salad greens in a large serving bowl. Top with the strawberries, red onions, feta, almonds and sliced chicken.
Whisk together the vinaigrette ingredients in a bowl, and drizzle over the salad.
Toss the salad well before serving.

- 2 Boneless Skinless Chicken Breasts cut in half lengthwise
- 3 tbsp Olive Oil
- 2 tbsp Sugar-Free Honey
- 3 tbsp Balsamic Vinegar
- 2 tsp Minced Garlic
- Salt and Pepper to taste
- 1/2 cup Sliced Strawberries
- 1/4 Red Onion sliced thinly
- 2 tbsp Sliced Almonds
- 1/3 cup Feta Cheese crumbled
