1 1/2poundsBeef Sirloin Steak cut into bite-sized pieces
3tbspOlive Oil
1/2Onion chopped
3tspMinced Garlic
1/3cupMatchstick Carrots
1tspCoriander
1tspCumin
1/2tspPaprika
1/4cupBeef Broth
3cupsCauliflower Rice cooked
Instructions
Heat the olive oil in a skillet over medium high heat.
Add the meat to the skillet, and season with salt and pepper to taste. Saute until the meat is browned and cooked to your liking. Remove and set aside.
Pour the beef broth into the skillet to deglaze it, and add the onion to the same skillet. Reduce the heat to medium. Saute until softened.
Stir in the coriander, cumin, paprika and minced garlic. Saute for 30 seconds.
Mix in the carrots, cauliflower rice, and return the meat to the skillet. Season with salt and pepper to taste, and saute another 5 minutes.
Garnish with parsley before serving if desired.
