Ingredients

  • 1 1/2 pounds Beef Sirloin Steak cut into bite-sized pieces
  • 3 tbsp Olive Oil
  • 1/2 Onion chopped
  • 3 tsp Minced Garlic
  • 1/3 cup Matchstick Carrots
  • 1 tsp Coriander
  • 1 tsp Cumin
  • 1/2 tsp Paprika
  • 1/4 cup Beef Broth
  • 3 cups Cauliflower Rice cooked

Instructions

  • Heat the olive oil in a skillet over medium high heat.
  • Add the meat to the skillet, and season with salt and pepper to taste. Saute until the meat is browned and cooked to your liking. Remove and set aside.
  • Pour the beef broth into the skillet to deglaze it, and add the onion to the same skillet. Reduce the heat to medium. Saute until softened.
  • Stir in the coriander, cumin, paprika and minced garlic. Saute for 30 seconds.
  • Mix in the carrots, cauliflower rice, and return the meat to the skillet. Season with salt and pepper to taste, and saute another 5 minutes.
  • Garnish with parsley before serving if desired.
