Reimagine cauliflower rice! This savory beef cauliflower rice pilaf is low-carb and makes a filling lunch or dinner.

Is Rice Pilaf Keto
Classic rice pilaf is a savory dish where the rice is cooked in some sort of savory broth and pungent spices. It can be served with or without meat.

What sets pilaf apart from other rice dishes is that the grains of rice don’t stick together. It’s more of a sandy or loose texture.
Since classic rice pilaf is made from white or brown rice, it isn’t keto-friendly. That’s why I made a keto-friendly version of rice pilaf with cauliflower rice.
Cauliflower Rice Pilaf
This cauliflower rice pilaf has a similar texture to classic rice pilaf. The grains of cauliflower rice don’t stick together and the flavors are just as bold and delicious.

As tasty as this dish is, it’s surprisingly low in carbs, too! There are just 3 grams net carbs in each serving! And don’t be afraid to adjust the amounts of spices that you use.
The combination of coriander, cumin, and paprika work so well together. Use more paprika if you want to give it a bit more heat.
Beef Rice Pilaf
What kind of steak tastes best in beef rice pilaf? Since you are frying the steak on the stove, I suggest using a tender cut. If you use stew meat, it will be tough to chew.

I used sirloin steak in this recipe and it turned out perfectly! Do you have to use steak? Nope, you can make this with chicken thighs instead of beef. If you are going to use chicken, I suggest using chicken broth instead of beef broth.
What To Eat With Rice Pilaf
Honestly, this rice pilaf is an entire meal in one skillet. You don’t have to add much to the table! If you want to make a low-carb side dish, try one of these recipes.
For everyone who loves a lot of spice, Keto Spicy Green Beans with Caramelized Pecans is the perfect side dish, every single time. They are both hot and sweet at the same time.
How about Keto Radish Salsa on the side? It’s a fun dip, so serve it with some sliced cucumbers or bell peppers. And Keto Scalloped Zucchini is always a great choice!
All that cheesiness is popular with everyone.

You also can’t go wrong with a keto-friendly salad. In fact, I have three salads that will taste incredible with the rice pilaf.

Keto Cheesecake Factory Chopped Salad is a very filling salad that you could almost serve by itself.

How To Store Rice Pilaf
This is the perfect recipe to add to your weekly meal prep. All of the ingredients will stay fresh in the refrigerator without the texture changing too much.

Store leftover cauliflower rice pilaf in an airtight container in the refrigerator for up to three days. Then, reheat it in the microwave or on the stove in a skillet.
