Ingredients

  • 12 ounces Mini Bell Peppers seeded and halved
  • 1 pound Chorizo Sausage crumbled
  • 1/3 cup Cheddar cheese shredded
  • 1 Roma tomato chopped
  • 1/4 cup Red Onion chopped
  • 1 Jalapeno seeded and sliced

Instructions

  • Slice bell peppers in half, remove seeds. Place bell peppers on a baking sheet.
  • If your chorizo is not crumbled, remove casings and crumble yourself. Saute in a skillet, over medium heat, until fully cooked.
  • Top the bell peppers with cooked chorizo crumbles. Add cheeses, chopped tomato, red onion and jalapeno slices.
  • Cook at 400 degrees F for approximately 8-10 minutes, or until the cheese is melted.
  • Remove from the oven and top with fresh parsley and a drizzle of sour cream, if desired.
