Ingredients

  • 2 Chicken Breasts
  • 1 cup Cottage Cheese
  • 1/4 cup Mayonnaise
  • 2 Celery Stalks diced
  • 2 Green Onions Sliced
  • 1/2 cup Blackberries (Sliced in half or quarters, depending on size)
  • 1/2 tsp Salt and Pepper
  • 1/4 cup Chopped Walnuts
  • ` Keto Bread optional

Instructions

  • Cook chicken based on your preference. (Baked, boiled, grilled). Once cooked through, shred and chop into bite-sized pieces. Set aside to cool.
  • Chop celery and onions.
  • In a large bowl, combine the shredded chicken, celery, onions, blackberries and walnuts.
  • Stir in the cottage cheese and mayo. Mix well.
  • Season with salt and pepper.
  • Serve as is, or on your favorite keto bread.
