There are so many different flavors and textures playing together in this refreshing salad. Crunchy walnuts, crispy green onions, juicy chicken breasts, and sticky-sweet blackberries all work together with the tastiest dressing.

Low Carb Blackberry Cottage Cheese Chicken Salad Sandwich

This is a salad you make when you’re not in the mood for another lettuce-based salad. There’s no lettuce here!

Be generous with the blackberries! They add the perfect amount of sweetness to the tangy and zesty salad.

There are only 6.1 grams net carbs in an entire cup of blackberries. I only used 1/2 a cup, but feel free to double it.

Just remember to update the carb amounts.

Raspberries have the same amount of carbs as blackberries. But a cup of strawberries has 9 grams net carbs! 

The blackberries taste best when you mix them in with all of the other ingredients. But remember to save a few and use them as a garnish! Adding a few whole blackberries really makes the colors in the salad pop (and makes the salad look more appetizing, too).

Ingredients

  • Chicken Breasts
  • Cottage Cheese
  • Mayonnaise 
  • Celery Stalks
  • Green Onions 
  • Blackberries
  • Salt and Pepper
  • Chopped Walnuts
  • Keto Bread (optional) 

Directions 

Adding the dry ingredients to a mixing bowl

Cook chicken based on your preference. (Baked, boiled, grilled). Once cooked through, shred and chop into bite-sized pieces. Set aside to cool.

Chop celery and onions. In a large bowl, combine the shredded chicken, celery, onions, blackberries and walnuts.

Mixing the ingredients together

Stir in the cottage cheese and mayo. Mix well. Season with salt & pepper.
