Think beyond the sandwich! This BLT cauliflower salad is made with fresh onion, cherry tomatoes, bacon, and mixed greens.

Ingredients

Salad

  • 1 head Cauliflower cut into bite-sized pieces
  • 3 slices Bacon cooked and crumbled
  • 1/3 cup Onion chopped
  • Cherry Tomatoes cut in half
  • 1 1/2 cups Mixed Greens

Dressing

  • 1/4 cup Mayonnaise
  • 1/4 cup Cottage Cheese
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Cumin
  • 1/2 tsp Chipotle Powder
  • 3 tbsp Water

Instructions

  • Bring a large pot of water to a boil. Once boiling, add chopped cauliflower for 5 minutes. Immediately drain and rinse with cold water. Set aside for now.
  • In a blender, combine all the dressing ingredients and pulse until you have a smooth consistency.
  • In a large mixing bowl, combine the cooked/cooled cauliflower, bacon, onion, tomatoes and mixed greens. Top with dressing and toss well.
